Chicken and Chorizo Paella

This is my go to recipe for when I have lots of friends coming round in the summer. Serve the paella hot and get your beers cold. Now that's a recipe for a good afternoon!
This is a Gordon Ramsay recipe. So Gordon please don't sue me.

Ingredients

  • 1 large onion diced
  • 1 large red pepper deseeded and dices
  • 5 garlic cloves
  • 200 g cooking chorizo sausage
  • 1 tsp smoked paprika
  • A pinch of Saffron
  • 400 g skinless and boneless chicken thigh
  • 500 g paella rice
  • 200 ml dry white wine
  • 1 litre of chicken stock
  • 1 x 400g tin of chopped tomatoes
  • 24 mussels
  • 300 g squid
  • 300 g King prawns
  • 400 g peas
  • Handful of chopped parsley
  • 2 lemons

Instructions

  • Dice the onion and pepper a lightly sauté in your paella dish for a few minutes. Then add your garlic and paprika and fry for a further minute.
  • Cut your chorizo and chicken into bitesize pieces and add to the onions and peppers. Season with salt and pepper. Fry for a few minutes.
  • Add your paella rice and season with additional salt and pepper and fry for 2 minutes.
  • Add in the chopped tomatoes, white wine, chicken stock and saffron and mix evenly.
  • Simmer for 10 minutes before adding your prawns and mussels and cook for a further 5 minutes
  • Once the prawns are cooks and the mussels have opened (discard any that haven’t) add your peas and squid and cook for a further 3 minutes
  • Finish with parsley and season with salt and lemon juice.
  • Enjoy!
