Dice the onion and pepper a lightly sauté in your paella dish for a few minutes. Then add your garlic and paprika and fry for a further minute.
Cut your chorizo and chicken into bitesize pieces and add to the onions and peppers. Season with salt and pepper. Fry for a few minutes.
Add your paella rice and season with additional salt and pepper and fry for 2 minutes.
Add in the chopped tomatoes, white wine, chicken stock and saffron and mix evenly.
Simmer for 10 minutes before adding your prawns and mussels and cook for a further 5 minutes
Once the prawns are cooks and the mussels have opened (discard any that haven’t) add your peas and squid and cook for a further 3 minutes
Finish with parsley and season with salt and lemon juice.
