Chicken and Chorizo Paella
This is my go to recipe for when I have lots of friends coming round in the summer. Serve the paella hot and get your beers cold. Now that's a recipe for a good afternoon!This is a Gordon Ramsay recipe. So Gordon please don't sue me.
Ingredients
- 1 large onion diced
- 1 large red pepper deseeded and dices
- 5 garlic cloves
- 200 g cooking chorizo sausage
- 1 tsp smoked paprika
- A pinch of Saffron
- 400 g skinless and boneless chicken thigh
- 500 g paella rice
- 200 ml dry white wine
- 1 litre of chicken stock
- 1 x 400g tin of chopped tomatoes
- 24 mussels
- 300 g squid
- 300 g King prawns
- 400 g peas
- Handful of chopped parsley
- 2 lemons
Instructions
- Dice the onion and pepper a lightly sauté in your paella dish for a few minutes. Then add your garlic and paprika and fry for a further minute.
- Cut your chorizo and chicken into bitesize pieces and add to the onions and peppers. Season with salt and pepper. Fry for a few minutes.
- Add your paella rice and season with additional salt and pepper and fry for 2 minutes.
- Add in the chopped tomatoes, white wine, chicken stock and saffron and mix evenly.
- Simmer for 10 minutes before adding your prawns and mussels and cook for a further 5 minutes
- Once the prawns are cooks and the mussels have opened (discard any that haven’t) add your peas and squid and cook for a further 3 minutes
- Finish with parsley and season with salt and lemon juice.
