Paddy’s Greek Salad

Ingredients
- 4 beef tomatoes
- 1/2 red onion
- 1 cucumber
- 1 big handful of salad leaves
- 200 g feta cheese
- Olive oil
- White wine vinegar
Instructions
- Roughly chop your tomatoes. Add them into a bowl with a few tbsp of olive oil and season generously with salt and pepper.
- Then half your cucumber. Remove the seed with a teaspoon and then chop to a similar size as the tomatoes.
- Peel and finely slice you onions and add it in with the tomatoes.
- Add your salad leaves and add some extra olive oil and a splash of white wine vinegar.
- Give it a toss and top with your chopped feta.
- Enjoy!
