  • 4 beef tomatoes
  • 1/2 red onion
  • 1 cucumber
  • 1 big handful of salad leaves
  • 200 g feta cheese
  • Olive oil
  • White wine vinegar


  • Roughly chop your tomatoes. Add them into a bowl with a few tbsp of olive oil and season generously with salt and pepper.
  • Then half your cucumber. Remove the seed with a teaspoon and then chop to a similar size as the tomatoes.
  • Peel and finely slice you onions and add it in with the tomatoes.
  • Add your salad leaves and add some extra olive oil and a splash of white wine vinegar.
  • Give it a toss and top with your chopped feta.
  • Enjoy!
