Granola with Mango and Passionfruit Compote

A delicious granola recipe which is the perfect way to start your day. Make in bulk and it will feed you and the whole family for a week.

Ingredients

For the Granola

  • 300 g porridge oats
  • 75 g flaked almonds
  • 75 g pecans
  • 50 g pumpkin seeds
  • 50 g sunflower seeds
  • 150 ml maple syrup
  • 3 tbsp of vegetable oil
  • 1 tbsp of ground cinnamon
  • 80-100 g sultanas
  • 60 g desiccated coconut

For the mango and passionfruit compote

  • 1 tin of mango
  • 1 fresh mango
  • 3 passionfruit
  • 1 lime
  • Caster sugar

Serve with Greek Yoghurt

    Instructions

    • Preheat your oven to 160 degrees Celsius.
    • Add all your granola ingredients to a bowl except the sultanas and desiccated coconut and give it a mix.
    • Season with a touch of salt and add to a lined baking tray. Pat it flat so it cooks evenly and bake for 15 - 20 minutes.
    • Remove from the oven and add your sultanas and coconut and bake for another 10 minutes until golden brown. Store in an airtight container and it will last up to a month. (I’m sure it’ll be gone by then because it’s so delicious)
    • For the mango puree: open your tinned mango and drain the sugar syrup. Add the mangos to a blender and blend to a smooth puree.
    • Finely dice the fresh mango and scoop out the inside of the passionfruit. Add to the mango puree and season with lime zest, lime juice and sugar to taste.
    • Serve in a glass with the puree in the bottom. Followed by some greek yoghurt and top with Granola.
    • Enjoy!
