  • 8 chicken thighs
  • 6 rashers of streaky bacon
  • 2 heads of romaine lettuce
  • 1/2 a cucumber
  • 1 pack of croutons
  • Parmesan

For the Dressing

  • 6 tbsp of greek yoghurt
  • Half a lemon juiced
  • 1 clove of garlic minced
  • 3 anchovies finely chopped
  • A handful of grated parmesan
  • 50-100 ml of olive oil
  • Salt and pepper


  • Preheat your griddle pan on a high heat.
  • Season the chicken thighs with salt and pepper and cook in the griddle pan for around 4 minutes on each side until golden brown all over. Leave to rest.
  • Place the bacon in the griddle pan and cook until golden brown.
  • For the dressing. Mix all the dressing ingredients in a bowl and season with salt and pepper.
  • Roughly chop your lettuce and cucumber and add your dressing.
  • Add your croutons and chop up your bacon and chicken.
  • Serve in a bowl and garnish with some extra chicken and shavings of the parmesan.
  • Enjoy!
