@samhollandfood Chicken Caesar Salad – Quick N Easy #16
Ingredients
- 8 chicken thighs
- 6 rashers of streaky bacon
- 2 heads of romaine lettuce
- 1/2 a cucumber
- 1 pack of croutons
- Parmesan
For the Dressing
- 6 tbsp of greek yoghurt
- Half a lemon juiced
- 1 clove of garlic minced
- 3 anchovies finely chopped
- A handful of grated parmesan
- 50-100 ml of olive oil
- Salt and pepper
Instructions
- Preheat your griddle pan on a high heat.
- Season the chicken thighs with salt and pepper and cook in the griddle pan for around 4 minutes on each side until golden brown all over. Leave to rest.
- Place the bacon in the griddle pan and cook until golden brown.
- For the dressing. Mix all the dressing ingredients in a bowl and season with salt and pepper.
- Roughly chop your lettuce and cucumber and add your dressing.
- Add your croutons and chop up your bacon and chicken.
- Serve in a bowl and garnish with some extra chicken and shavings of the parmesan.
- Enjoy!
