Season the chicken thighs with salt and pepper and cook in the griddle pan for around 4 minutes on each side until golden brown all over. Leave to rest.
Place the bacon in the griddle pan and cook until golden brown.
For the dressing. Mix all the dressing ingredients in a bowl and season with salt and pepper.
Roughly chop your lettuce and cucumber and add your dressing.
Add your croutons and chop up your bacon and chicken.
Serve in a bowl and garnish with some extra chicken and shavings of the parmesan.
