Shakshuka

A great recipe if you are looking for a new brunch recipe. Shakshuka is from the middle east and is a dish which is becoming more popular.

Ingredients

  • 1 red bell pepper
  • 2 cloves of garlic
  • 1 tsp harissa paste
  • 1/2 tsp of cumin
  • 1/2 tsp of smoked paprika
  • 3 beef tomatoes
  • 4 eggs
  • A small bunch of coriander
  • 30 g feta cheese
  • 4 slices of sourdough bread

Instructions

  • Dice your pepper and slice your garlic and sauté in a frying pan for a few minutes with a drizzle of vegetable oil.
  • Add in your harissa paste and spices and fry off for a further minute.
  • Chop your tomatoes roughly and add to the pan.
  • Once the tomatoes have stewed down (roughly 5-8 minutes) make 4 wells within the mix and crack in your eggs. Turn the heat down low and place a lid over the pan and gently cook for around 7-8 minutes.
  • Whilst the eggs are cooking, toast your bread.
  • To serve. Scoop the eggs onto the bread along with all the tomatoes and peppers. Garnish with some feta cheese and fresh coriander.
