Pesto Al Forno
This is a dish me and my twin love ordering on Deliveroo. I challenged him I could make it before his arrived through the door. Not only was mine ready before his, mine was tastier and came in cheaper. What’s not to like?
Servings: 2 people
Ingredients
- 180 g penne paste
- 1 chicken breast
- 1 red onion
- Handful of chestnut mushrooms
- 3 tsp of basil pesto
- 100 ml double cream
- Handful of grated parmesan
- 1 ball of fresh mozzarella
- Serve with some fresh basil
Instructions
- Preheat your oven grill to its highest setting.
- Bring the water to the boil. Season the water with salt and cook the pasta.
- Finely slice the red onion and roughly chop your mushrooms and set aside.
- Finely slice the chicken breast and cook in a hot frying pan with a touch of vegetable oil until cooked.
- Remove the chicken from the pan and add the onions and mushrooms. Season with salt and pepper and cook for 5 minutes.
- Add the chicken back into the pan and add the pesto and cream and reduce it for a few minutes.
- Drain the cooked pasta and add it into the pan and season with salt and any extra pesto if needed.
- Once it’s tasting delicious sprinkle over some grated parmesan and mozzarella and place under a hot grill until golden.
