Spiced Pork Burger with Winter Slaw

Ingredients

For the burgers

  • 500 g minced pork
  • 80 g N’duja
  • Handful of chopped parsley
  • 1 egg
  • 1 Tbsp of smoked paprika
  • 1 tsp Cayenne pepper

For the burger toppings

  • 4 burger buns
  • 4 slices of mild cheddar cheese
  • Lettuce leaves
  • 1 Red onion
  • Beef tomatoes
  • Garlic and lemon Aioli
  • 100 g mayonnaise
  • 1 lemon zested
  • 1 garlic clove minced

For the Winter Slaw

  • 1/4 red cabbage finely chopped
  • 4 carrots grated
  • 1 head of fennel
  • 4 red apples thinly sliced
  • 50-100 g of Mayonnaise

Instructions

  • Preheat the oven to 180 degrees Celsius.
  • Add to a large mixing bowl the pork, N’duja, parsley, egg and spices. Season with salt and pepper and use your hands to combine.
  • Once combined shape into four even sized burgers and set in the fridge.
  • Now onto the winter slaw. Finely chop the red cabbage, apples and fennel and add into a separate bowl. Grate in the carrot and add enough mayonnaise to combine. Season with salt and pepper and set aside.
  • Slice the lettuce into bitesize pieces and thinly slice the tomatoes and set aside. These are for the burger toppings.
  • For the aioli, add mayonnaise into a bowl and season with lemon zest, minced garlic and a touch of lemon juice and set aside.
  • Get a frying pan nice and hot and add some vegetable oil. Add the burgers and fry for a few minutes until they are golden brown. Flip them onto the other side and add two slices of cheese on top and cook for another couple of minutes. Place in the oven for 5 minutes to finish the cooking and melt the cheese.
  • In the meantime toast you buns, (either in a frying pan or in the oven)
  • To Assemble: add some of the garlic and lemon Aioli to each bun, followed by the burger and then top with lettuce, tomato and red onion. Place the lid on top with a generous amount of slaw on the side and you’re good to go.
  • Enjoy!
