Peri Peri Chicken Samwich

If your bored of a standard beef burger give this piri piri chicken burger a go. It delivers on flavour and is healthier.

Ingredients

  • 8 skinless boneless chicken thighs 

Marinade

  • 3 roasted red peppers (from the jar)
  • 1 or 2 fresh chillis (depending how spicy you want it)
  • 5 garlic cloves 
  • 1 lemon zested
  • Half a lemon juiced
  • 1 tbsp mixed herbs 
  • 1 tbsp Paprika
  • 1 tsp Cayenne pepper (optional depending on how spicy you want it)
  • Vegetable oil to combine (around 50ml)

Toppings

  • Iceberg lettuce 
  • Beef tomatoes
  • 100 g mayonnaise
  • Lemon juice 
  • Garlic
  • 4 ciabatta burger buns 

Instructions

  • Place all the marinade ingredients into a food processor and blend until smooth. (similarly you could chop all ingredients nice and fine)
  • Taste and season and marinate chicken thighs and leave overnight or for as long you can.
  • Cut the iceberg lettuce and the tomatoes ready for the burgers.
  • Add the mayonnaise to a bowl, add the minced garlic and a squeeze of lemon juice. Taste and season with salt and pepper and set aside. 
  • Toast the burgers on the grill and set aside
  • Preheat your grill for 5 to 10 minutes and then grill the chicken on either side till charred and cooked through
  • Assemble the burgers and serve with chips and coleslaw and 
  • Enjoy!
