Peri Peri Chicken Samwich
If your bored of a standard beef burger give this piri piri chicken burger a go. It delivers on flavour and is healthier.

- 8 skinless boneless chicken thighs
Marinade
- 3 roasted red peppers (from the jar)
- 1 or 2 fresh chillis (depending how spicy you want it)
- 5 garlic cloves
- 1 lemon zested
- Half a lemon juiced
- 1 tbsp mixed herbs
- 1 tbsp Paprika
- 1 tsp Cayenne pepper (optional depending on how spicy you want it)
- Vegetable oil to combine (around 50ml)
Toppings
- Iceberg lettuce
- Beef tomatoes
- 100 g mayonnaise
- Lemon juice
- Garlic
- 4 ciabatta burger buns
Place all the marinade ingredients into a food processor and blend until smooth. (similarly you could chop all ingredients nice and fine)
Taste and season and marinate chicken thighs and leave overnight or for as long you can.
Cut the iceberg lettuce and the tomatoes ready for the burgers.
Add the mayonnaise to a bowl, add the minced garlic and a squeeze of lemon juice. Taste and season with salt and pepper and set aside.
Toast the burgers on the grill and set aside
Preheat your grill for 5 to 10 minutes and then grill the chicken on either side till charred and cooked through
Assemble the burgers and serve with chips and coleslaw and
