Peri Peri Chicken Samwich
If your bored of a standard beef burger give this piri piri chicken burger a go. It delivers on flavour and is healthier.
Servings: 4 people
Ingredients
- 8 skinless boneless chicken thighs
Marinade
- 3 roasted red peppers (from the jar)
- 1 or 2 fresh chillis (depending how spicy you want it)
- 5 garlic cloves
- 1 lemon zested
- Half a lemon juiced
- 1 tbsp mixed herbs
- 1 tbsp Paprika
- 1 tsp Cayenne pepper (optional depending on how spicy you want it)
- Vegetable oil to combine (around 50ml)
Toppings
- Iceberg lettuce
- Beef tomatoes
- 100 g mayonnaise
- Lemon juice
- Garlic
- 4 ciabatta burger buns
Instructions
- Place all the marinade ingredients into a food processor and blend until smooth. (similarly you could chop all ingredients nice and fine)
- Taste and season and marinate chicken thighs and leave overnight or for as long you can.
- Cut the iceberg lettuce and the tomatoes ready for the burgers.
- Add the mayonnaise to a bowl, add the minced garlic and a squeeze of lemon juice. Taste and season with salt and pepper and set aside.
- Toast the burgers on the grill and set aside
- Preheat your grill for 5 to 10 minutes and then grill the chicken on either side till charred and cooked through
- Assemble the burgers and serve with chips and coleslaw and
- Enjoy!
