Chicken Larb Salad
Full of flavour and easy to cook. This has to be one of the best salads out there. Can be a main course or a side dish if you want.
Servings: 2 people
Ingredients
- 2 skinless chicken breasts
- 2 cloves of garlic
- 1 thumb sized piece of ginger
- 1 chilli
- 1 red onion
- A handful of fresh coriander
- A handful of fresh mint
- 3 Tbsp of fish sauce
- 1.5 tsp of sugar
- Juice of 1 lime
- Iceberg lettuce
Instructions
- Roughly chop your chicken breast and pulse in a food processor until minced.
- Season with salt and pepper and fry in a frying pan until cooked.
- Mince your garlic and ginger, finely slice your chilli and red onion and add to your cooked chicken and cook for 1 minute.
- After the minute take off the heat and add it to a large mixing bowl.
- For the dressing combine the fish sauce, sugar and lime juice. Stir well to dissolve the sugar and add to the mixing bowl.
- Finely chop your corriander and mint and add to the chicken mix. Give it a final stir. Taste it to check for seasoning and adjust if necessary.
- Line your bowl with leaves of the lettuce and fill the bowl with the larb mix.
