Chicken Larb Salad

Full of flavour and easy to cook. This has to be one of the best salads out there. Can be a main course or a side dish if you want.

Ingredients

  • 2 skinless chicken breasts
  • 2 cloves of garlic
  • 1 thumb sized piece of ginger
  • 1 chilli
  • 1 red onion
  • A handful of fresh coriander
  • A handful of fresh mint
  • 3 Tbsp of fish sauce
  • 1.5 tsp of sugar
  • Juice of 1 lime
  • Iceberg lettuce

Instructions

  • Roughly chop your chicken breast and pulse in a food processor until minced.
  • Season with salt and pepper and fry in a frying pan until cooked.
  • Mince your garlic and ginger, finely slice your chilli and red onion and add to your cooked chicken and cook for 1 minute.
  • After the minute take off the heat and add it to a large mixing bowl.
  • For the dressing combine the fish sauce, sugar and lime juice. Stir well to dissolve the sugar and add to the mixing bowl.
  • Finely chop your corriander and mint and add to the chicken mix. Give it a final stir. Taste it to check for seasoning and adjust if necessary.
  • Line your bowl with leaves of the lettuce and fill the bowl with the larb mix.
  • Enjoy!
