Chicken Larb Salad
Full of flavour and easy to cook. This has to be one of the best salads out there. Can be a main course or a side dish if you want.

- 2 skinless chicken breasts
- 2 cloves of garlic
- 1 thumb sized piece of ginger
- 1 chilli
- 1 red onion
- A handful of fresh coriander
- A handful of fresh mint
- 3 Tbsp of fish sauce
- 1.5 tsp of sugar
- Juice of 1 lime
- Iceberg lettuce
Roughly chop your chicken breast and pulse in a food processor until minced.
Season with salt and pepper and fry in a frying pan until cooked.
Mince your garlic and ginger, finely slice your chilli and red onion and add to your cooked chicken and cook for 1 minute.
After the minute take off the heat and add it to a large mixing bowl.
For the dressing combine the fish sauce, sugar and lime juice. Stir well to dissolve the sugar and add to the mixing bowl.
Finely chop your corriander and mint and add to the chicken mix. Give it a final stir. Taste it to check for seasoning and adjust if necessary.
Line your bowl with leaves of the lettuce and fill the bowl with the larb mix.
