Chicken Burger with a roasted garlic and chilli aioli
A fantastic cheat day meal! Not the healthiest but it's always nice to treat yourself every once in a while.
Servings: 4 people
Ingredients
- 4 skinless boneless chicken thighs
- 300 ml butter milk
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 1 tsp cayenne pepper
- 1 tbsp salt
- 1 tsp pepper
- 2 litres vegetable oil
- 200 g plain flour
- 1 garlic bulb
- 1 chilli
- 150 g mayonnaise
- iceberg lettuce
- 4 sesame burger buns
Instructions
- Marinate the chicken thighs in the butter milk along with the garlic powder, onion powder, paprika, cayenne pepper and season with salt and pepper. Wrap in cling film and leave overnight.
- Trim the top of the garlic bulb (exposing the cloves) add a drizzle of olive oil season with salt and pepper and wrap in tin foil. Drizzle the chilli with olive oil wrap in tin foil and roast together at 160 degrees Celsius for 45 minutes.
- Once finished you can squeeze the garlic out of its skin and make a garlic and chilli paste but chopping them finely.
- Combine with your mayonnaise. Season it with salt and pepper and a squeeze of lemon juice.
- Place your plain flour in a bowl along with garlic powder, onion powder, paprika, cayenne pepper, salt and pepper.
- Drizzle a few spoonfuls of the buttermilk marinade into the flour and mix (this will make bigger flakes and make your chicken even crispier)
- Dredge your chicken into the flour ensuring everything is covered in flour.
- Deep fry at 180 degrees for around 6 minutes until it's golden brown.
- Toast your burger buns and chop your lettuce.
- Assemble with your garlic and chilli aioli, followed by the burger and lettuce.
- Enjoy!
