Blueberry Muffins
I love making this recipe early on in the week and slowly snack on them throughout the rest of the week. Admittedly they don't last very long.
Servings: 14 muffins
Ingredients
- 300 g plain flour
- 160 g sugar
- 1.5 tsp of baking powder
- 1/2 tsp of bicarbonate of soda
- Pinch of salt
- 100 ml oil
- 220 ml buttermilk
- 2 eggs
- 220 g blueberry reserving a handful for garnish
- 1 tsp of vanilla extract
- Handful of Demerara sugar
Instructions
- Preheat oven to 200 degrees Celsius.
- Mix the flour, sugar, baking powder, bicarbonate of soda and salt in a big mixing bowl.
- Combine the oil, buttermilk, eggs and vanilla extract in a separate bowl and whisk to combine.
- Pour the wet mixture into the flour mixture and add the blueberries. Fold until smooth and combined. If it’s too dry add a splash of milk to loosen it up.
- Spoon the mixture into the muffins moulds and fill them three quarters of the way up.
- Add in extra blueberries on the top (I like to add at three per muffin) and sprinkle with Demerara sugar.
- Bake for 20 - 25 minutes or until a knife is inserted into the middle and comes out clean.
- Leave to cool.
