Blueberry Muffins

I love making this recipe early on in the week and slowly snack on them throughout the rest of the week. Admittedly they don't last very long.

Ingredients

  • 300 g plain flour
  • 160 g sugar
  • 1.5 tsp of baking powder
  • 1/2 tsp of bicarbonate of soda
  • Pinch of salt
  • 100 ml oil
  • 220 ml buttermilk
  • 2 eggs
  • 220 g blueberry reserving a handful for garnish
  • 1 tsp of vanilla extract
  • Handful of Demerara sugar

Instructions

  • Preheat oven to 200 degrees Celsius.
  • Mix the flour, sugar, baking powder, bicarbonate of soda and salt in a big mixing bowl.
  • Combine the oil, buttermilk, eggs and vanilla extract in a separate bowl and whisk to combine.
  • Pour the wet mixture into the flour mixture and add the blueberries. Fold until smooth and combined. If it’s too dry add a splash of milk to loosen it up.
  • Spoon the mixture into the muffins moulds and fill them three quarters of the way up.
  • Add in extra blueberries on the top (I like to add at three per muffin) and sprinkle with Demerara sugar.
  • Bake for 20 - 25 minutes or until a knife is inserted into the middle and comes out clean.
  • Leave to cool.
  • Enjoy!
