Lasagna
Lasagna is always a safe bet to do when having people over for dinner. Here are a few tips to make yours better than most!
Servings: 6 people
Ingredients
Beef Ragu
- 2 white onions
- 3 carrots
- 3 sticks celery
- 1 tbsp tomato pureeÂ
- 3 tins chopped tomatoes
- 300 ml red wine
- 2 kg beef shin
- 1 beef stock cube
- 3 bay leaves
White Sauce
- 50 g butter
- 50 g plain flourÂ
- 700 ml milk
- 75g cheese
- Nutmeg
Other
- 1 pack lasagna sheets
- Handful of grated parmesan
Instructions
- Preheat the oven to 140 degrees celsius/ 280 FahrenheitÂ
- Dice the onions, carrots and celery and sweat in a large casserole pot until soft and translucent.Â
- Season the beef with salt and fry either side in a frying pan on a high heat until golden brown and set aside.
- Add the tomato puree to the vegetable and fry for a minute.
- Add the wine, chopped tomatoes, beef stock cube and bay leaves.
- Add the beef to pot and cover with water.
- Bring to the boil. Put a lid on and bake for 2 and a half hours or until nice and tender.
- For the white sauce melt the butter in a saucepan.
- Add the flour and cook for 1 minute.
- Take off the heat and slowly add the milk until fully combined.Â
- Slowly bring to the boil and simmer for two minutes.Â
- Take off the heat and add your cheese, salt and pepper and a pinch of nutmeg.Â
- Taste and season and set aside.Â
- Once the beef is tender, strain through a colander and reduce the cooking liquor until you have a thick gravy. Preheat oven to 180 degrees Celsius / 350 Fahrenheit Â
- Shred the beef with two forks and discard any bones.
- Once your happy with the sauce add your beef back into the sauce. Now you're ready to assemble.Â
- To assemble, spread a layer of ragu across the bottom of the dish, then a layer of lasagna sheets. Then add another layer of ragu followed by the white sauce. Then a layer of pasta sheets and continue until you fill the dish.
- Once you’ve added your final layer of pasta. Then add a layer of ragu and then white sauce and then finish with some grated parmesan.
- Bake at 180 degrees/ 350 Fahrenheit for 35 - 45 mins. Or until golden brown.
