Lamb Koftas

Ingredients
- For The Lamb Koftas:
- 500 g Lamb Mince
- 2 Tsp Ground Cumin
- 1 Tsp Ground Coriander
- ½ Ground Cinnamon
- 1 Tsp Paprika
- 1 Tsp Mixed Herbs
- 2 Garlic Cloves
- Handful of Fresh Mint 15g
- Handful of Fresh Parsley 15g
- Salt
- Black Pepper
- Zest of 1 Lemon
- For The Garlic Mayo:
- 150 g Mayonnaise
- Handful of Fresh Mint 15g
- 2 Garlic Cloves
- Squeeze of Lemon Juice
- To Serve:
- Beef Tomatoes
- Red Onion
- Iceberg Lettuce
- White Pitta Bread or Flatbread
Instructions
- Mix all the kofta ingredients together and form the koftas.
- Fry on a griddle pan to get some lovely char marks, cooking on each side, about 8-10 mins in total. Once cooked, keep warm.
- Place the mint, mayo, minced garlic and lemon juice in a bowl and mix well. Season with salt and pepper, adding more lemon juice if needed.
- Thinly slice the tomatoes, red onions and iceberg lettuce. Set aside.
- Lightly toast the flatbread before adding a thin layer of the garlic mayonnaise, the koftas and topping off with the veggies. Finish with some more garlic mayo. Enjoy.
