Take your steak out of the fridge at least 30 minutes before you plan to cook it.
Season it generously with salt and preheat your frying pan on a high heat.
Once the pan is smoking add a few tablespoons of vegetable oil and add your steak.
For a medium rare steak, cook for 2 minutes on each side and then remove from the pan to rest.
Finely slice your onion and add it into the pan. Season with salt and cook for 5 minutes.
In the meantime, slice your ciabatta bread in half and toast.
For the horseradish mayonnaise, simply mix the mayo with a touch of horseradish sauce. Taste and season and set aside.
Once the bread is toasted and the onions are caramelised it’s time to build.
Spread on the mayonnaise on both sides of the bread. Top with steak, following up with the onions and garnish with some rocket. Place the lid on and you’re done.
