Harrys Spicy Pasta
This has to be Harry’s favourite meal I cook. I love this recipe because the sauce comes together in the same time it takes the pasta to cook. It’s super quick and easy but packs a punch. This is a Holland classic and hopefully your friends and family can enjoy it aswell.

- 350 g casarecce pasta or any pasta of your choosing
- 2 chicken breasts
- 1 stick of chorizo
- 2 cloves of garlic
- 150 g cherry tomatoes
- 6 tsp of red pesto
- 3 tsp of harissa paste
- 250 ml of double cream
- 300 g spinach
- Parmesan cheese
Bring a large pot of water to a rolling boil. Season generously with salt and add your pasta.
Thinly slice your chicken breast and peel and slice your chorizo and add it into a hot frying pan. Season with salt and pepper and cook for 5 minutes.
Thinly slice the garlic and add it into the pan with the cherry tomatoes.
Add the pesto, harrisa and creme fraiche and simmer for a few minutes. Taste and season with more pesto or harissa.
Place the spinach into a colander and once the pasta is cooked (remember reserve a mug of pasta water) pour it into the colander and the hot water will wilt the spinach.
Place the pasta back into the large pot and add the sauce. If the sauce is too thin add a handful of parmesan and it will thicken it up. However if it’s too thick add some of that reserved pasta water. Give it a final taste and a final season and serve. Harry likes his with garlic bread.
