Preheat the oven to 200 degrees Celsius
Place the flour into a bowl along with the cold cubed butter. Rub the butter into the flour until it resembles breadcrumbs.
Add your sugar and a pinch of salt and mix.
Crack one egg into a separate bowl and add the buttermilk. Beat together until smooth.
Add the liquid into flour mixture and mix until it forms a smooth dough. Be careful not to overwork the dough as it will lead to a tougher scone.
Tip onto a lightly floured work surface and roll to the thickness of 1 inch.
Using a circular cutter, cut out the scones and then with the excess pastry bring it back together with your hands to cut out the last few scones.
Place the scones on a lined baking sheet, brush the tops with egg wash and place in the oven for 10 minutes.
They are ready when they are risen and golden brown.
Serve with clotted cream and strawberry jam.
